jon,
I had the opportunity to ride both versions & the olins setup is definitely worth the extra. However, I've noticed lot of these olins develope oil leak since the fork seal originally used are low grade. However, I'm ceratin it's easily upgrded. On the other hand, I ended up with Marzocchi forks & after 15k miles no issues...but, they are definitely harder to setup and harsher than olins.

I've also ridden both and prefer the Ohlins. Don't forget you also get fancy CF bits and rubber mounted handlebars for your $2k. :)

The bars on the non-S 1100 are also rubber mounted.

I rode both versions before buying my 1100. I enjoy a firm ride, and didn't find any real advantage with the Ohlins. I think you guys in the USA expect a plusher ride, so it's up to you, but I don't think they're worth the extra. I've no complaints with my standard set-up.

Really depends on your weight and your riding style. If you are in the 170-200 lbs. range, then the Ohlins can be adjusted to better fit you. If you are outside of that range, your going to have the forks/shocks done anyway.

The cost of Ohlins components are more than the typical RaceTec pieces. Once your into the internals, you can get the stock units to be just about as good as the Ohlins.
